Food labels, diet articles, and wellness content throw around terms like glycemic index, net carbs, and bioavailability as if everyone already knows what they mean. Most people don't — and that's not a personal failure. Nutrition science has its own vocabulary, and it often gets borrowed by marketers who use it selectively to make products sound healthier than they are.

This glossary gives you plain-English definitions for the terms you're most likely to encounter. Macronutrient

One of the three main nutrients that supply energy: carbohydrates, protein, and fat. Each plays distinct roles in the body, and all three are required for normal function.

Micronutrient

Vitamins and minerals the body needs in small amounts to support processes like immune function, bone health, and energy metabolism. They don't provide calories but are essential for health.

Glycemic Index (GI)

A scale from 0 to 100 that ranks how quickly a carbohydrate-containing food raises blood glucose, compared to pure glucose. Foods above 70 are considered high-GI; below 55, low-GI.

Net Carbs

Total carbohydrates minus fiber (and sometimes sugar alcohols). This figure is not regulated by the FDA and is often used on low-carb product packaging. Its accuracy varies by fiber type.

Bioavailability

The proportion of a nutrient that is actually absorbed and used by the body after digestion. Processing method, food combinations, and individual gut health all affect bioavailability.

% Daily Value (%DV)

A percentage on the Nutrition Facts label showing how much of a nutrient one serving provides relative to a standard daily reference amount based on a 2,000-calorie diet.

Refined vs. Whole Grain

Whole grains contain the bran, germ, and endosperm of the grain kernel. Refined grains have been milled to remove the bran and germ, which also removes fiber and some nutrients.

Saturated Fat

A type of fat that is solid at room temperature and found mostly in animal products and some tropical oils. Current dietary guidelines recommend limiting saturated fat intake, though research on its health effects continues to evolve.

Added Sugars

Sugars and syrups added to foods during processing or preparation, as distinct from sugars naturally present in fruit or milk. Added sugars are listed separately on the Nutrition Facts label.

Dietary Fiber

A type of carbohydrate that the body cannot fully digest. It supports digestive health, helps regulate blood sugar, and contributes to feelings of fullness. Found in vegetables, fruits, legumes, and whole grains.

Antioxidant

A compound that helps protect cells from damage caused by unstable molecules called free radicals. Many vitamins and plant compounds act as antioxidants, though the health claims around isolated antioxidant supplements are often overstated.

Ultra-Processed Food

Foods that go beyond basic preservation or cooking to include industrial ingredients and additives not typically used in home cooking, such as emulsifiers, artificial flavors, and stabilizers. The NOVA classification system is one widely used framework for defining this category.

Key Numbers You'll See on Food Labels

Several nutrition terms refer specifically to numbers printed on the Nutrition Facts panel. Knowing what those numbers represent — and what they don't — is essential for making sense of packaged food.

Calories measure the energy a food provides. The number on a label reflects one serving, not the whole package — a distinction that trips up many shoppers. % Daily Value (%DV) tells you how much of a nutrient one serving contributes toward a general daily reference amount. A %DV of 5% or less is considered low; 20% or more is considered high. These reference amounts are based on a 2,000-calorie diet and won't match everyone's actual needs.

Serving size is legally standardized for most product categories in the U.S., so comparing the same food across different brands is straightforward.
